A versatile joint perfect for any occasion.
Great as a succulent slow roasting joint or in a pot roast. Nothing beats the shoulder for flavour and tenderness, slow roasted alongside some Herefordshire root vegetables or smoked and covered in a barbecue sauce. After just a couple of hours of slow cooking, you will have tender dish, with a deep sweet flavour.

Our pork is truly free range, living outdoors for their whole lives. They have space to roam our beautiful Herefordshire countryside, grazing, foraging and socialising. We truly believe that this traditional, free-range, way of farming is the best and most sustainable and is in line with our ethos.
We’re exceptionally proud of our pork. Sourced from known and trusted local farms, our skilled butchers prepare the pork on the premises. We use the whole animal so every pork item in our shop comes from these pigs. You can find our pork not only on the fresh meat counter, but also in our home made sausages, pork pies and much much more.
Remove the pork from the fridge one hour before cooking.
Rub sea salt into the scored skin, and season the underside of the joint with sea salt and pepper.
Place the joint in the oven at 220c for 30 minutes, or until the skin has started to puff up.
Reduce the heat to 170c, cover the joint in foil, and cook for a further 4 hours.
Remove the foil and bast the joint with the natural fat, the re-cover. Add chopped carrots, onions and celery to the tin and cook for a further hour.
Serve the pork and crackling with homemade gravy and all of the trimmings (not forgetting the all important apple sauce!).
