Our Herefordshire brisket makes for a great pot roast.
The rolled brisket will come with a good marbling of rich fat through the cut which once slowly cook, will gently break down adding to the hearty beef flavour. As the fat renders, it enhances the succulent meat, and creates and unrivalled flavour for your accompanying gravy.
Brisket is best slow cooked creating a tender, rich, flavoured joint.

At Legges all of our beef is sourced from Herefordshire, from within a few miles of our shop. To ensure we source only beef of the highest quality, each week we individually select the best from a handful of local farmers whom we know and trust. We then hang our beef to mature for 28 days on the bone when our skilful butchers prepare each cut, delivering our celebrated succulent beef to your table.
Before cooking, remove the brisket from the fridge and bring to room temperature.
Lightly season the brisket with salt and pepper, and pop into a covered casserole dish, or slow cooker. Some chopped shallots and garlic can be added for extra flavour.
Put the brisket in the oven at 140c, or a slow cooker, for at least six hours and, if possible, longer.
Once cooked, the joint will fall apart and melt in the mouth. Simply serve with creamy mash.
