Herefordshire Free Range Loin of Pork

A very tender, flavoursome cut from the sirloin from our Herefordshire free range pigs. The crispy crackling, combined with the light texture and deep sweet flavour make this the perfect Sunday roast joint.
This loin of pork makes for a fantastic slow roast dinner leaving you with beautiful succulent slices of Herefordshire pork packed with sweet, deep, flavour. Ideal for those who prefer less fat in their meat, but who are addicted to crackling.

Our pork is truly free range, living outdoors for their whole lives. They have space to roam our beautiful Herefordshire countryside, grazing, foraging and socialising. We truly believe that this traditional, free-range, way of farming is the best and most sustainable and is in line with our ethos.
We’re exceptionally proud of our pork. Sourced from known and trusted local farms, our skilled butchers prepare the pork on the premises. We use the whole animal so every pork item in our shop comes from these pigs. You can find our pork not only on the fresh meat counter, but also in our home made sausages, pork pies and much much more.
Heat the oven to 230c.
Turn the pork rind-side down and with a small knife make about 6 deep incisions along the meat. Insert a sliver of garlic, a piece of rosemary and bay leaf in each incision and turn the. Season with sea salt.
Chop carrots, onion and apple and scatter on a shallow roasting tin, making a bed for the pork to site on. Sit the pork on the vegetables and drizzle oil over the skin.
Place the pork in the oven and cooked for 15 – 20 minutes, until the skin starts puffing and forming the best looking crackling.
Reduce the temperature to 180c and roast for 35 minutes for a 1kg joint; cook for a further 20 minutes per kg thereafter.
Leave to rest for at least 20 minutes before serving.
