At Legges all of our beef is sourced from Herefordshire, from within a few miles of our shop. To ensure we source only beef of the highest quality, each week we individually select the best from a handful of local farmers whom we know and trust. We then hang our beef to mature for 28 days on the bone when our skilful butchers prepare each cut, delivering our celebrated succulent beef to your table.
Before cooking, remove the topside from the fridge and bring to room temperature.
Season the fat and then pop the topside into a roasting tin . Put it into your oven at 220c for 15 minutes, until the outside is browned. This will seal the joint, ensuring that the flavour and moisture is retained during cooking.
Once browned, turn down the oven to 160c and roast for 20 minutes per kg.
Once cooked, allow the join to rest for 20 minutes before serving.
