All of our Herefordshire beef is hung on the bone for at least four weeks, resulting in a sublime tender cut, with a real depth of flavour.

If your Christmas Order does not contain any Fresh Meat, then we may dispatch your order before the dates noted above.
At Legges all of our beef is sourced from Herefordshire, from within a few miles of our shop. To ensure we source only beef of the highest quality, each week we individually select the best from a handful of local farmers whom we know and trust. We then hang our beef to mature for 28 days on the bone when our skilful butchers prepare each cut, delivering our celebrated succulent beef to your table.
Before cooking, remove the fillet from the fridge and bring to room temperature.
Lightly season your fillet and place into the hot pan, to brown on all side. This will seal in the flavour.
Once the fillet is browned, transfer to preheated oven at 220c for approximately 20 minutes.
Remove from the oven and rest for 20 minutes.
