5 springtime supper ideas 3 May 2024 Spring has sprung (well, we’d like to think it’s certainly trying its best too!), and here in Herefordshire, seeing the winter-to-spring produce transition on our counters is a fond sight that’ll never get old! The question is – how can we all make the most of all the wholesome delights this new season offers us? In our latest farm shop blog we’ve handpicked five spring supper ideas you can try and tuck into at home this week: 1. Lamb chops with mint béarnaise, leeks and peas We all know and love how lamb is synonymous with the Great British springtime… And so when we began searching for spring supper ideas, these beautifully cooked lamb chops coupled with the vibrancy of the leeks and peas immediately caught our attention! Aesthetically simple, this dish by the Great British Chef’s Kitchen is cleverly brought together by a rich bearnaise sauce which is made with mint in place of tarragon to complement the seasonal lamb perfectly. Accompany with slices of crusty bread or crushed potatoes and voila – dinner is served! 2. Mustard glazed pork chops with beets, red onions and new season carrots With chops on our minds, we then stumbled on this combination, which is another stunning example of how Great British produce and a handful of herbs can be brought together to celebrate springtime! Once you’ve bought your plump pork chops and glazed them with mustard of your choosing, you only need to set aside 10 minutes of veggie prep time before cooking everything, so you can crack on with other weekend jobs. 3. Alfresco BBQ beef kebabs It’s been a long old winter, hasn’t it? And so what better way to wish for and welcome in the warmer weather and drier days (fingers crossed) than with BBQ beef kebab for dinner this weekend… These succulent skewers by Simply Lamb & Beef can be made with topside, rump or sirloin which you can purchase from our Hereford farm shops or order here online, so you can tuck into grass fed Hereford beef wherever you are in the country! 4. British asparagus and pea spring minestrone soup Looking out of the window, it’s not quite salad season just yet. However, that’s absolutely fine by us with recipes like this one by British Asparagus readily at our fingertips! Fresh, flavoursome and filling, their method couldn’t be easier to follow, and we just love how this spring supper idea lets the humble, in-season asparagus spears sit pride of place and do the talking. 5. Spring pavlova Of course, dinner wouldn’t be complete without something sweet to follow it… So why not try your hand at Jane’s Patisserie’s sweet, chewy and moreish meringue, whisked and filled up lovingly with Mawley Milk’s grass fed double cream, and topped with all your favourite fruits? NB. Meringue making doesn’t have to be complicated or look uniform in shape – the rustic the better we say! Do you have a go-to special spring recipe that’ll undoubtedly put a smile on your family’s faces? Our teams would love to hear what it is next time you pop into our Bromyard or Hereford farm shops!
