Spiced potato and coconut soup Goodbye salad season and hello sumptuous soups… Although we haven’t had long spells of sunshine this summer, the temperature has noticeably dropped as we hunker down into autumn which entices us to step away from the salad tray and consider more warming alternatives. The Happy Foodie’s suggestion of Chilly’s spiced potato and coconut soup is a ‘perfect pick me up’ and what’s even more fantastic is that you can batch cook it, so you can smugly pre-make next week’s nourishing lunches and/or dinners. 2. Easy venison casserole If your family is partial to a slow-cooked casserole on a busy weekday evening, we think you’ll all love this autumnal take on a classic from Great British Recipes. Packed with the star of the show: rich, earthy venison and accompanied by a generous splash (or three!) of a red wine of your choosing, this easy casserole recipe only takes 19 minutes to prepare before slow cooking it for four hours to achieve optimum mouth-watering delicious. 3. British toad in the hole with a twist You just can’t beat it, can you… It truly is a Great British golden oldie. Country Life’s recommendation of Melanie Johnson’s toad in the hole looks incredibly moreish and epitomises home-cooked comfort. The addition of bacon and leeks is said to elevate the rich and seasonal flavour, and the method seems quick and simple to follow, so why not give it a whirl?! Pan fried pheasant breast in a creamy white wine sauce We thought we’d sneak another game meat into this blog because we know you like to make the most of what’s in season! This recipe by The Effortless Foodie can be dressed up for a dinner party or down for a weekday family treat depending on your chosen accompaniments, and the creamy white wine sauce only takes under ten minutes to prepare. Cooking with seasonal meat, such as wild pheasant, can seem daunting as we don’t eat it all year round, however, it really doesn’t have to be, and we hope you’re tempted to give this a try – we will! 5. Spiced blackberry pudding The scrumping season is also here, and if you have a hedgerow still pickled with blackberries or know of someone who does, this autumn pudding, seasoned with mixed spice and ginger, is certain to fill your heart and soul with a sweet, warming goodness.
